Silver cutlery adds finesse to the table
Despite there usually being few – and mainly small – tables, the demand for cutlery in starred restaurants is more extensive. In addition to the cutlery for the main course, with this restaurant concept, a bread knife is often presented on the table, as well as cutlery for starters and desserts, and sometimes special items of cutlery depending on the orientation of the menu. Examples include the oyster fork, gourmet spoon, fish knife and fork and fruit knife. Often the demand for main course cutlery is therefore even lower than expected. Nevertheless, as with any concept, the quantity of individual cutlery items depends on the number of seats and courses as well as the order of the menu. As always, fine silver cutlery including a high-quality hollow-handled knife is at the top of starred restaurants’ wish lists.
Collections that harmonise
Essentially, several cutlery series from WMF Professional meet the requirements of a starred restaurant – in terms of breadth of the collection as well as the design. However, some can be especially highlighted. The classic Baguette for instance, or Mondial with its decorative thread around the edge and the traditional Residence cutlery. Signum with its round handle shape and Flair with its very intricate decoration also harmonise with the table arrangements of elegant gastronomic establishments. The right glass
Glasses also play an important role on elegantly laid tables. The water glass usually sits alongside matching wine glasses, according to the order of the menu. In addition, exquisite drinks such as champagne, cognac or liqueur are of course served to guests in the appropriate glasses. The glasses from the Manhattan, Divine and Divine Color series satisfy this need for an impeccable look and can be easily combined with any trend, such as the copper mug for the Moscow Mule drink. Divine Color enhances the laid table, adding an extra visual highlight thanks to the various shades of colour. For glasses that are used on a daily basis, around three times the actual number of glasses required should be kept in stock – unfortunately loss through breakages is an ever-present risk.
When the best is good enough
A rule applies in starred gastronomic restaurants: Only the best quality is used. Silver is therefore a clear favourite for cutlery. The hollow-handled knife, whose blade is inserted into the knife handle, is also an increasingly popular choice. High-quality glasses are characterised by their extremely high resistance to scratches and breakage. And the bowl of the glass merges seamlessly into the stem. This investment is worthwhile not only in terms of appearance and feel but also for economic reasons.
